Nose: Aromas of vanilla, new wood, cut grass, hay, fennel and aniseed.
Mouth: On the palate it is fatty, full-bodied, balanced and with a long aftertaste that rounds off the great structure of this wine.
Serving temperature: It is recommended to serve between 6ºC and 8ºC.
Consumption temperature: It is recommended to consume between 8ºC and 10ºC.
Pairing: It is an ideal wine to accompany appetizers, cured cheeses, oily fish rice (trout, salmon, or tuna). poultry and smoked.
Description: The vineyard from which this wine comes is in the town of Villaverde de Medina and has an average age of close to 30 years. The soils are mostly loam-clay-sandy. Thick elements predominate, providing freshness at night and radiating heat towards the bunches during the day.
Yield: The vineyard from which this wine comes has an average yield of 5,000 kilos of grapes per hectare.
Area: 100 hectares of the Verdejo variety with an average age of 30 years.
Winemaker: Sara Román de la Calle.
Harvest: Manual and daytime.
Vinification: The fermentation of this wine takes place in 225-liter French oak barrels to later carry out a “battonage” work in those same barrels for approximately 6 months.
Bottling: The wine is aged in the bottle for at least 6 months.
